Spring is the the Air
Spring temps are here and the whole family is excited about it!
We all wait for this time of year to start enjoying frozen desserts and Arctic Zero must have been reading my mind because they sent over a lovely shipment of their newest flavors to try. Thank you!!
We’ve also successfully stuck with our meal prepping goals into this second season of the year. Not only do we meal prep our lunches, but we also do with with many of the dinners that we consume at home throughout the week. This working mama does not have the time to create dinners from scratch every night. We want to eat quickly and get outside to play in the fresh air!
Here in the Mitten State (Michigan) we get the luxury of experiencing all 4 seasons. Speaking of mitten, I wanted to share with you a lovely snack that my husband brought home for me from a training session that he attended. Giving up his afternoon snack for me. That’s love right there folks…
Friday mornings (regardless of the season) are typically celebrated with a stop by Starbucks on the way into work. My perfect breakfast pairings with the nonfat latte that I pick up include a spotty banana and a touch of sweetness via a bar. Goodness Knows has bars which contain 4 individual segments which work wonderfully for portion controlling and having a few of the pieces serve as a morning snack.
The other night we got adventurous and made our healthified version of eggplant parmesan. It basically included thinly sliced eggplant with marina sauce drizzled on top and baked. I didn’t even miss the cheese!
More recent eats include this Mediterranean salad from Potbelly. This place is one of my son’s favorite so I was sure to take him there before his recent school field trip. Back to that salad…it was a combination of so many of my favorite ingredients: chicken, artichokes, red peppers, feta, hummus and more!
Meanwhile when I am back at the office, my lunches look a little more like this:
As we step into Spring, I am still stepping downstairs for my early morning weekday workouts. The weekends is typically when we head on over to our beloved Lifetime fitness for workouts and fun at the Kids Center. A whole family activity that I am thrilled we all look forward to.
