Lunch with Mary
Weekends are filled with parties and gatherings with family and friends. I am especially appreciative of those events where healthy options are made available. At a recent party, I had more salmon and asparagus than the typical guest would have consumed. Also, water out of a mason jar tastes better.
My husband and I can meal prep like the best of them but the best food to meal prep in my mind is sweet potatoes. I fid that the number of slices that we put in the pan never corresponds to the number that go into our containers. Hey, someone has to taste test for quality control, right?
We meal prep for a majority of our work lunch meals and we leave room for special outings, luncheons and events that happen to come up throughout the week ahead. Well, when I was invited to have lunch with Mary Barra, the Chairman and CEO of General Motors, and the top female executives of our company, I happily sacrificed my meal prepped lunch to enjoy this glorious salad creation. There were SO many healthy options available for me and the top 40 Women leaders of GM to enjoy. I added cucumbers, hard boiled egg, cherry tomatoes, feta, chickpeas, slivered almonds and walnuts to my salad. For protein, I couldn’t decide between the grilled chicken breast and the salmon so I went with a bit of both. (If you look closely, you can see a few sweet potato chips on the edge of my plate. Maybe Mary likes sweet potatoes just as much as I do?!)
I am quite passionate about encouraging girls to enter into STEM fields while also empowering fellow female engineers to succeed and GM is focused on building our female bench strength through a variety of initiatives. Something else that I love is getting fresh fruit delivered to me. My dad brought over a large bag of these golden devious apples. My boys gobble them up and I incorporate atleast one into my workday snacks. Also, an apple cake or two may be made with these.
Another thing that I love is the combination of a nonfat latte (obviously) and a bar. This is seriously my go-to Friday morning treat. These GoMacro Thrive bars are a new addition to my bar rotation and they are just fabulous. Chocolate peanut butter chip for breakfast. Yes, please.
As I said, lattes are typically reserved for Fridays, but the other days of the week I pull out a mug of choice at my desk workstation and pour in the office coffee. Messages on coffee mugs make my heart happy, especially this very true one below. Goodness Knows also knows how to create a fabulous bar. Their bars are perfectly segmented into 4 individual pieces which makes it easy to save some for later and enjoy throughout the day.
