A Perfect Pan
I recall the days when I thought that meal prep was for those intense workout people who counted every macro and worked out for countless hours of the week. Here I am, a normal (fit minded) mom and I find that meal prepping not only results in healthy lunches for the week but the time savings and efficiency aspect of it is my favorite. I recall spending time each and every evening packing our lunches for the next day. Now, we set aside time on Sunday evenings and roast, bake, grill and pack up our proteins and veggies for the week.
Another aspect of healthy living is staying hydrated. These S’well bottles are one of my favorite since they keep my beverages chilled for hours. Yellow is not usually my color but this one screams fun spring weather so it has been my staple bottle lately.
I emphasized the meal prepping of lunches earlier and I have to admit that the meal prepping of breakfasts is not something that I have yet mastered. I am a work in progress in terms of eating bigger, more protein filled first meals of the day. I have a tendency to grab a banana and a bar to enjoy with my cup of office coffee (and almond milk) when I get to work. On Fridays, I traditionally treat myself to a latte as a form of celebration for (almost) making it through the week. Goodness knows bars are great for portion control as well. On the days I have those, I typically eat 2 squares in between bites of my banana then I save the other two as a lunch dessert later on in the day,
I often find myself with a sweet tooth in the evenings. I offered to make a peanut butter and jelly sandwich for my husband the other night because I truthfully wanted to be able to steal a few bites.
Can we just take a moment to appreciate this glorious pan of grilled goodness? This is a peek at what my lunches look like for the week. (Side note: we are not big potato people, but when your 3 year old sneaks a bag of mini red skin potatoes, you roast them up and add them to the rotation).
My husband and I have been really focusing on reducing the amount of carbs we consume. We certainly are not carb-free but I am quite proud of how different my Mexican taco night creations look like now compared to before (and I really don’t miss the tortilla and sour cream all that much truthfully):
