I went to the University of Michigan (Go Blue!) for my undergraduate degree and lived with 4 other girls whom most I had met during our freshman year in the dorms. Us 5 ladies got married and had beautiful children and decided that it was time for a reunion. Since we are all scattered around the US, we opted for neutral territory and finally settled on renting a large house for all of us in Park City, Utah. All 19.5 of us (yes, you read that correctly…one of my friends is pregnant) had a blast and it was so priceless to see our children play so well together.
Here’s a little summary of the healthy eats that I encountered on the trip…
My boys LOVE croissants so as we were doing a little drive by tour of downtown Salt Lake City, we came across this adorable french pastry shop and simply had to stop.
They also had macarons and since my little guy is obsessed with them, I had to order a couple. It is pretty much guaranteed that I will never be able to get an unbitten photo of macarons when my toddler is near. That guy is quick!
Before heading to the house to meet the roommates, we enjoyed a lovely family dinner at Myrtle Rose. Salads with grilled protein are my typically dining out meal choice, but when I saw this tofu filled roasted acorn squash featured on the menu, I simply could not pass it up
We used an online grocery shopping service and since we were the first ones to arrive, I proceeded with putting away the goods. I rewarded myself with a drink as I sat and admired their glorious stonework on the fireplace mantle.
One of the evenings we had a mom’s night out. Nothing crazy to report here, but we must have sat at dinner for a good 4 hours sipping wine, dining on a fabulous meal, and chatting about life. We had kicked off the evening with a specialty bruschetta featuring pomegranate seeds. A perfect and much needed night if you ask me.
Did you really think I would go on a trip and not experience a latte from their local coffee shop? Java Cow did not disappoint with this coconut latte and the fantastic view in the background while walking around downtown.
The flight home (in yoga pants) included matching GoMacro bars for my husband and I. I love him, that is why I share my favorite snacks with him.
We thoroughly enjoy traveling but I always look forward to getting back to my usual routine once we get home. One of the first things we did was roast a bunch of veggies and chicken to prepare our lunches for the week.
